Asian Roll Ups

I recently tried an Asian Roll Up recipe. I’ve made a few tweaks to it. This recipe requires no cooking. It’s one that would be easy and fun to do with children; older children who can use knives and a can opener could do this one on their own. We loved it.

Ingredients:

1 (11-oz.) can Mandarin oranges

1 (14.75 oz.) can salmon, drained and flaked

1/2 cup finely chapped green onions

1/2 cup alfalfa sprouts

3 Tbsp. sunflower seeds

1/4 cup diced mushrooms

2 Tbsp. peanut butter

1 Tbsp. fresh lemon juice

2 cloves garlic, pressed

1/2 teaspoon ground ginger

1/4 cup soy sauce plus 1 Tbsp., divided

6 flour tortillas

1 tablespoon vinegar

Instructions:

Drain oranges, reserving 2 Tbsp of the liquid. Chop enough oranges to make 1/2 cup and reserve remainder for a green side salad.

Place the first 10 ingredients in a bowl along with the 1 Tbsp. soy sauce. Blend well. Spoon a portion of the salmon filling on each tortilla; wrap.

In a small bowl combine remaining 1/4 cup soy sauce, reserved mandarin orange liquid, and vinegar. Blend well and use as a dipping sauce.

Serve with a green salad and in-season veggies.

    This is the tweaked one. I added the sprouts, sunflower seeds, and mushrooms.
